Are our data backed up? What happens if the server breaks down or disappears.

Yes. All our servers - and your server as long as it is accessible to us over ssh - gets automatically backed up remotely to our server in Germany, as a cron job in Linux. This currently happens daily between 5pm and midnight, GMT+2.
This image is then currently being backed up to our server in Kempton Park, where it is archived. Archived backups are at the time of writing kept daily for two weeks, weekly for two months, and monthly thereafter. The main reason for the two step process, is so that we can easily create more remote backups by connecting to Germany, without costing our customers more bandwidth.
Custom backups can also be set up between servers, but this is an extra support function which is payed for separately. The basic method used is a Linux utility called rsync. Some of our clients make a backup of their online server to a local server on their company intranet, to allow their in-house automatic processes to receive a performance boost (since their internet is slow). Another client has a development system set up in SAP where he has 3 different Plug and Play Scada servers connected to each: one for his SAP Development environment, another for his SAP QA Environment and another for his Production environment. The data is then moved between the servers in parallel with the updates of the various SAP Environments, e.g. when the weekly refresh of QA happens from Production, the same process is done on the Plug and Play Scada servers' side.

There is also backups that happen on each server.
You can checkup on these backups by going to Tools->System Stats 2
and scrolling down to backups
